Why is it....


....that my practice cakes always turn out so much smoother than the real things?

That's beautiful! My cakes never turn out that good. What's your secret? :)

Thanks! After you get it fairly smooth, start dipping the spatula in really hot water, then wipe it off and smooth it lightly over the icing. It really smooths the buttercream down and gives it a really good surface for decorating.
